Quinoa Salad

Quinoa is a grain high in nutrients traditionally grown as a staple food high in the Andes by Lake Titicaca.  Long before hip, suburban health food stores stocked this comma-shaped seed, the Aymara people of the Andes were given the gift of quinoa.

Ceviche

According to some historic sources from Peru, ceviche would have originated among the Moche coastal civilization that began to flourish in the area of current-day northern Peru nearly 2000 years ago. The dish is typically made from fresh raw fish cured in citrus juices, such as lemon or lime, and spiced with ají or chili peppers. Additional seasonings, such as chopped onions, salt, and cilantro, may also be added

Ají de Gallina

This is a delicious, traditional Peruvian chicken stew in a spicy, nutty cheese sauce. It takes time, but is well worth it! It is served over rice and potatoes

Chocolate Cake
